In a vegan/ vegetarian diet lentils (dal)are one of the main sources of protein and this dish is packed with it! I generally double the quantity of dal in any South Indian recipe as I do the turmeric.
Delicious as is, smabar can be served as a soup, eaten with rice or with idli, dosai vadai and other tiffin items. Each region in the south has its own melange of spices and ingredients to give Sambar their own distinctive flavor.
