Mixed Vegetable Kootu

My mom has a rare talent for being able to open up the refrigerator, and with the peas, the leftover eggs, the cream, the spinach, the cheese, and a little rice, she can just whip up incredible risotto.

A Mixed Vegetable Kootu is always on the menu the day I’m cleaning put the refrigerator before a trip to the grocery.

A delicious lentil and vegetable stew, flavored with coconut and spices. Delicious as a soup for the carb conscious, or can be eaten with rice. Add an Apalam ( lentil or rice crisp) on the side for crunch !

Recipe – I use a time efficient recipe to make it all in one shot, with little prep.

🍵 Roast till golden and Blend together to form a paste
1/2 cup coconut
3 red chillies
1/2 tsp pepper
1.5 tsp Jeera (Cumin Seeds)
1 tscp Channa Dal (sub with rice flour – as this is for thickening )

🍵Soak 1/2 cup Thur dal in 1 cup water for 20 mts
🍵In an Insant pot or small pressure cooker
Add
Cooked Thur Dal and 1.5 cups water
Place a stand and a small stainless steel container with
1/2 cup water
10 curry leaves
1/4 cup onions
3 cups mixed vegetables
The coconut spice paste
The Thur dal
1.5 tsp salt
1/3 tsp turmeric
Pressure cook with Vent shut for 6 minutes in Instant Pot or 3 Whistles in cooker.
🍵Once pressure is settled, open and mix all together
🍵Tempering
Heat 1 tbsp oil
Let crackle
1 tsp Jeera ( Cumin)
1 tsp Mustard
Add 1/4 tsp Asafoetida
🍵Add to Kootu along with 2 tbsp chopped Cilantro.
Serve hot !
