Winter time calls for warm and comforting foods. Food that brings joy and lighten up the indoors when it’s grey and chilly outside.
When the temperature drops, it’s a perfect time to prepare and indulge in warming slow cooked food. Rajma and rice. Soul food for winter, the only one perhaps coming close to the Western Chilli. Dried beans, brought to life in a spicy and tangy stew from with the right spices

Recipe notes –
1. Instead of the melange of masala powders for Rajma I very often use 2 tbsp of Kitchen King masala and the chilli powder specified, which is more flavorful.
2. After the Rajma cooks as per above recipe, I generally add 1 tsp Garam Masala and 1 tsp Kasuri Methi with half cup of water and slow cook it for 30 mts for additional flavor.
3. Very often I use tinned Red Kidney Beans. In this case after sautéing the masla, I add water and beans and slow cook for half an hour and then follow step 2 above.
