Masala Vadai

Masala vadai to me is equated to monsoon or winter days, and  best served with a cup of tea. It’s tantalizing aromas have often lead you by the  nose to a potti kadai ( small shop) in an unnamed street in Madras, which GPS can’t find!

Served wrapped in a newspaper soaked with oil, five star hotels cannot match the taste street food like this! Made of ground lentils this is flavored with garlic, herbs and onions

A most delicious snack that definitely
needs to be deep fried and dripping in oil for it to taste it’s best ! Please don’t use an Air Fryer for this! If need be add an extra mile to your exercise routine!

Recipe Notes
Double the cilantro and mint –  the more the merrier for this vadai.
Add 1 tbsp Rava or Semolina for crispness just before deep frying
