Traditionally made with days old Dosai batter
Uthappam or Vegan Pancakes, brown and fluffy with a healthy vegetable salad toping on the other
I have a “fridge clean” week, before a grocery trip where we eat up all the miscellaneous vegetables and leftovers tucked in various corners. So this was an ideal recipe to make with those ingredients.
Recipe
丹Temper 3 cups of left over Dosai dough*
Heat 1 tbsp oil
Let splutter
1 tsp Mustard seeds
1 tsp Jeera (Cumin) seeds
1 tsp Channa Dal
3 finely chopped green chilies
丹Heat a non stick pan. **
Pour the batter to form a thick pancake
Sprinkle the salad – I used carrots, onions and bell peppers
Shut and cook
丹Flip over for a minute and remove
Top with extra fresh salad if desired before serving.
Great anytime of the day with a spicy coconut chutney and Molaga podi ( spiced chilli powder) mixed in oil.
*In the absence of Dosai dough Uthappam can be made with Bisquick ( the original mix and not the sweetened pancake mix )
** Oil is traditional but optional
