Uthappam – A spicy Indian pancake, usually made by glaming up days old dosa (Indian Crepe) batter, enhanced by a few tasty toppings. A delicous breakfast, that can be served with chutneys, but is great as is on any morning!

Recipe
🥞 Heat 2 tbsp oil
Let splutter
1 tsp Mustard seeds
1 tsp Cumin seeds – Jeera
Add 1 tsp Urud dal
2 Red Chillies torn into pieces
1/4 tsp Asafoetida
🥞 Add this seasoning to 3 cups of dosa dough
🥞 Heat a flat griddle Pour the seasoned dough into the center
🥞Add topping of your choice. I added a simple onion cilantro mixture, but it can include finely chopped tomatoes, peppers, grated carrots and the like.
🥞Let cook on low flame. When half cooked, small circles will be seen on the surface. Now add half a tsp of oil all around to aid cooking.
🥞Add a generous sprinkle of Molaga podi ( spiced lentil and chilli powder) before serving.
