Thengai Pal Biryani (Coconut Milk Biryani)

On a busy day, I used the One pot One shot (OPOS) method, invented by Mr. Rama Krishna to make Chettinad Theyngapaal (coconut milk)Biryani. A simple rice dish enriched with vegetables and flavored with coconut milk and spices, served in eco friendly coconut shell bowls.

Recipe
🥥Soak 1 cup basmati rice for 1 hour.
Chop 2 cups veggies of your choice.
To one half of the veggies,
mix in 1/2 cup thick coconut milk
1 tablespoon biryani masala
1/4 tsp turmetic
1.5 tsp salt.
🥥In a 2 litre pressure cooker / Instant Pot, standardized for OPOS (please Google it and ensure standardizion before starting!!)
Layer 1:
1/2 cup water
3 teaspoons ghee
1 serrano pepper chopped
1 cinnamon stick,
2 bay leaves
1 star anise
🥥Layer 2:
1/2 cup chopped tomatoes.
🥥Layer 3:
1 cup of plain chopped veggies.
🥥Layer 4: Drained basmati rice, spread over the veggies
🥥Layer 5: 1 cup of veggies mixed with spices. Make sure to cover the rice completely.
🥥Cook on high for 2 whistles in cooker/ 5 minutes Instant pot
🥥Let pressure settle naturally.
Open, mix everything gently and garnish with 2 tbsp chopped cilantro

Serve hot with Pachadi and Chips for crunch !
