Despite good intentions to make pasta from scratch again, life got in the way, complete with a shoulder impingement, so no trying to crank a pasta maker handle for a while 😒 Home made pasta or not, this is a great pasta recipe, complete with he spice my Indian palette needs !
Pasta Arabiata
🍝Boil 6 quarts of water with 3 tbsp salt
Cook 1 lb pasta till al dente
Drain and save about 1/2 cup of the water
🍝Heat
4 tablespoons olive oil over medium heat
Add
1 heaped tsp crushed Garlic Stir till browned . 🍝Then add
1/2 cup tomato paste
1 tbsp Red pepper flakes
1.5 cups chopped tomatoes
1 tbsp Italian seasoning
🍝Cook about 4 minutes till the tomatoes are softened and remove from the heat.
🍝Mix with Pasta and as much reserved water you need to coat well
🍝Garnish with Parmigiano-Reggiano cheese and Basil before serving.
