Quick Sambar

Pressure cookers are relatively inexpensive, they’re in every kitchen store, your grandma probably had one, but a lot of people don’t. A pressure cooker is interesting because by pressurizing the vessel, you’re able to cook much hotter than the boiling point of water, and still have water be present.~ Nathan Myhrvold

My handy dandy pressure cooker comes to my rescue on busy weekdays to create great food. A quick and delicious mixed vegetable Sambar is always on the menu on the day before I have to grocery shop. A melange of leftover vegetables cooked with thur dal for protein and spiced with Sambar powder, the Pressure Cooker/ Instant Pot makes this in minutes. This, with rice and chips makes a delicous meal 😀

Recipe
♨️n a small pressure cooker or Instant Pot
Add in that order
1 cup water
3 cups vegetables
3 cups cooked Thur dal ( I cook and freeze this for ease of use)
2 heaped tsp Sambar Powder and 1/3 cup coconut ground to a paste
1.5 tsp salt
1/2 tsp turmeric
♨️Cook for 3 whistles ( 7 minutes pressure cook in Instant pot.)
Release pressure immediately.
♨️Mix in 1 to 2 cups water. Sambar should not be like slush, but like a thick stew.
2 tbsp Swad Tamarind paste. This is mild and flavorful
1/3 tsp Asafoetida
♨️Temper
Heat oil and let splutter
1 tsp each Mustard and Cumin seeds
2 to 4 red chillies
1 tsp Urud Dal
♨️Garnish with a generous sprinkling of Cilantro
