“If you learn a recipe, you can cook the recipe. If you learn the technique, you can cook anything.” ~ Michael Symon
When the daughter wants Badam Halwa for Diwali… in the last minute.
A quick 10 minute no stand and stir version using OPOS – one pot one shot method invented by Mr. Rama Krishnan. I learnt this technique a few years back and it’s amazing how many recipes can be recreated in this quick and easy way without losing the authenticity of flavor for the most part.
OPOS Badam Halwa with Costco Almond flour
In a 2 l pressure cooker
Add 1 cup sugar
1/4 cup water
2 pinches saffron
Release pressure after cooking for 8 whistles.
To this, Add 1 cup Costco Almond flour made into a tight paste with 2 tbsp milk
Add 2 tbsp ghee
1 pinch orange food coloring
Stir to a paste without lumps. Cool and Enjoy !
