Kalyana Rasam is made for special occasions. The Rasam Podi is ground fresh and added at the very end to enhance the flavors. The variation in the spicws in the podi also serve as a thickening agent.
In Indian weddings, RSVP s aren’t very strict, and it’s not unusual to have a larger crowd than anticipated turn up. On such ocassions, it easy to add some podi and hot water and enhance the quantity of the Rasam prepared this way, without losing the flavor.
