Raitha (Yogurt dip)

The variety is endless but the crucial ingredient is good dahi, preferably made at home. – Vasundara Chauhan

Tomato onion raitha

1. In a bowl, add
1/2 cup finely chopped onions

2. Whisk 2 cups of yogurt till smooth and add it to the chopped onions

3. Take 1 cup plum tomatoes, and slice each tomato into 2

4. Heat
1 tsp oil
Splutter 1 tsp Jeera (Cumin seeds)
1/4 tsp Saunf ( Fennel seeds)
Add the chopped tomatoes
Toss a couple minutes till they are tender but still firm
Do not cook and let turn soggy !
Add
1/2 tsp Kashmiri Chilli powder
1/2 tsp sugar
1/2 tsp salt
Mix well and let sit in heat for a minute

5. Add to the bowl of onion and yogurt

6. Garnish with coriander

Served with any Indian meal. Can also be used as a scooping dip with pita or tortilla chips or any bread.
