Kootu Masala Paste

Kootu is a protein enriched lentil, vegetable curry/stew, that can be served with rice or rotis or great to drink as a 🍲 soup

A melange of spices and coconut forms the base for a great Kootu.
I bulk prep this, freeze in silicon muffin moulds, pop them out and freeze in zip lock bags. Stays fresh for 3 months.
This saves time and makes life easier when you cook Kootu on a regular basis.

Kootu paste recipe –

For an individual serving*
πŸ₯„πŸ² Dry roast
1/3 cup grated coconut till golden
πŸ₯„ 🍲 Add
1 tsp cumin seeds
1/2 tsp black peppercorns
11/2 tbsp chana dal
2 dried red chillies (or as per taste) or green chillies
A few curry leaves
Saute till aromatic for a few minutes
πŸ₯„πŸ² Add
1tsp rice
Grind to a thick paste with water

* I Multiply this quantity by 12 for bulk prep

*** Similar bulk prep recipe posted already for arachi vitta sambar – a similar lentil, vegetable curry / stew, served with rice and idli, dosai and vadai, or great to drink as a soup. Sambars generally have tamarind added in them for additional flavoring.
