Upma


Spicy  Vegetable  Upma – great for a cool Fall morning. Serve with Coconut Chutney* or pickle. Goes great with Filter Coffee* and the morning paper! Greta for an anytime meal also !

Recipe
北 Heat 1 tbsp of oil in a pan on medium heat
Let crackle
1 tsp  Jeera ( Cumin seeds)
1 tsp  mustard
Add
1 tsp Channa dal
2 Red Chillies 
and toss till dal is light brown
北 Add
1/2 cup finely chopped Onions
6 to 8 curry leaves
1 inch finely chopped Ginger
2 to 3 chopped Green Chillies
Saute till onions are golden
北Add
1/2 cup chopped vegetables
1/ tsp asafoetida
2 cups water
1.5 tsp Salt
Let water come to boil
Cook till vegetables are al dente
北Add 1 cup Ravai /Semolina /Sooji
Stir in with no lumps
Close and let it rest for 10 mins.
Stir well. Add a generous dollop of ghee before serving for additional flavor!

Busy Day Method
In a pressure cooker or Instant pot
北Saute till golden in 1 tbsp oil **
1/2 cup chopped Onion
6 to 8 Curry leaves
1 inch chopped ginger
2 to 3 chopped green chilly
北Add
2 cups water
1 tsp salt
1/2 cup cut vegges
2 tbsp chopped Cilantro
北Close the lid with weight and  cook
Pressure cooker on high flame for 2 whistles
Or
Instant pot pressure cook 5 mts
北Release pressure after 5 minute
Mix in
1/4 tsp asafoetida
1 cup roasted Ravai/Semolina/Sooji
北Close and let it rest for 15 mins
Open and add tadka cube*
Add a generous dollop of ghee for additional flavor!
Stir well before serving
