Tomato Soup

An age old favorite for a cold night tomato soup.

Recipe
In the Instant pot or cooker
1. Melt 2 tbsp butter or Olive oil for a vegan dish
2. Saute 1 Bay leaf
3 cloves garlic
1/2 cup onions till golden
3. Add 500 g tomatoes
Sauté 3 minutes till softened
4. Add 1 cup water or vegetable broth
5. Pressure cook 3 whistles or 8 minutes in Instant pot
6. Let cool. Blend to a smooth paste. Strain
7. Bring this puree’ to boil adding
1 tsp salt
1 tsp Pepper and 1 tsp sugar
Add 1/2 tsp Garam Masala if you want an Indian flavor
Simmer 5 mts
Put off heat
8. Add half cup of cream and stir before serving
9 Serve with bread sticks
