Garlic Naan

Soft dough, shaped with gentle strokes, impressed with the colors of fine grains of topings, brushed with final master stroke – of melted butter!

Rocket* Garlic Naan

Recipe
1. Dissolve
2 tsp yeast &
1 tsp sugar in luke warm water.
Wait for 5 mts for yeast to activate and mixture to froth

2. Sift together
4 cups flour
2.5 tsp salt

3. Add 1 to 2 and mix well
Add 1/2 cup yogurt
2 eggs **
Gradually adding WARM water, knead well to form a soft pliable dough***

4. Coat dough with 1 tbsp oil
Cover and let proof in a warm place (or in the oven with the light on) for 6 to 8 hrs till double in size.
Punch dough down once when doubled in size – around the 4 hr mark and let rise again

5. Just before making the Naan, punch the dough down again
Mince 2 tbsp garlic
Chop
2 tbsp of green chillis (or seranno pepper) into fine miniscule cubes
4 tbsp cilantro finely
Divide Naan dough into generous ball shaped portions

6. Flour your working surface
Roll/ pull dough gently into tear shapes
Sprinkle with garlic, chopped chillis and cilanto and pat down to adhere and partly embed in the naan.

7. Heat a pan till very hot
Brush with water
Quickly place a naan on it
Brush top of naan with water
The dough will cook and bubble
At this stage,
If using a gas stove flip pan over stove for naan to char
If using an electric flip over and press down firmly on the pan

8. Brush with melted butter. Enjoy !

* A generous sprinkling of green chillis on this, should act as a rocket, and take you to the 🌙 !
** 🥚 Eggs🥚 are optional. They make the dough more stretchy. I make it both with and without eggs.
***I generally use a Kitchen Aid mixer for this
