Butternut Squash Soup

A simple soup – its flavors envelop you in warmth for cool winter days.

Recipe
Sauté
1 Bay lef
1 tbsp minced Garlic and
1 small onion, chopped
In 2 tbsp Butter ( olive oil if vegan)

Add
1 medium carrot, chopped
2 medium potatoes, cubed
1 medium butternut squash – peeled, seeded, and cubed
Sauté for 2 to 3 mts

Add
4 cups Vegetable stock

Pressure cook for 5 mts

Remove Bay leaf
Blend to a fine puree when cooled.

Add
1 tsp Pepper
1/4 tsp Nutmeg
2 tbsp cream ( avoid if vegan)

Notes
1 tsp Crushed Red Chilli Flakes if you need more zing !
If you desire a more liquid soup, add 1 cup warm stock or water
