Peanut Sauce – Whisk together and set aside
1.5 cups Peanut Butter
1/2 cup Hot water
1.5 tbsp Chilli Sauce
2 tbsp Soy Souze
1 tbsp White wine vinegar
1 tsp Pepper
Cook 3 cups Rice Noodles till al dente’. Drain. Wash in cold water and set aside.
Heat 3 tbsp Sesame Oil
Sauté till fragrant
2 tbsp Minced Garlic
1/2 cup Spring Onions/ Green Onions/Scallions
Add and cook till soft
1 cup Onions
1/2 cup Carrots
Add and stir in
1 cup Air fried cubed Tofu
1 cup Spinach
Add enough Peanut Sauce to coat Vegetables
Add cooked Noodles
Add more Sauce if needed.
At this point check and adjust salt – both the Peanut Butter and Soy sauce should have enough salt generally.
Garnish with crushed Peanuts, Spring Onions and a wedge of lime.
