Baingan Barta in the Air Fryer !
Quick, delicious and minus the mess. And useful for people like me who do not have a gas, but a ceramic stove top.
Recipe
Slit and Stuff 3 medium Eggplant/ 🍆 Brinjal
With 6 small cloves of Garlic
Cube
2 medium Tomatoes (about 1 cup)
1 medium Onion (about 1/2 cup)
2 Green Chillis
Place in an Air Fryer
Sprinkle 1/2 tsp salt
1 tbsp Oil
Cook at 400° F for 20 mts
Remove when done
Scoop and mash Brinjal/ Eggplant 🍆
Coarsely grind Tomato Onion Green Chillis
Combine and Adjust salt to taste
Tadka
Heat 2 tbsp Oil on medium
Let splutter 1 tsp Cumin Seeds
Switch off heat. Add and stir for one minute till raw smell gone
1 tsp Chilli powder
1 tbsp Coriander Powder
Combine with Eggplant mushy mixture
Garnish with Cilantro ( about 2 tbsp, chopped )
Great as a side with rice or rotis. Does well as a wrap filling too. Serve with Pita or Naan wedges as a dip !
