Vegetable Kootu – mixed vegetable stew
Recipe
Make a paste out of
1/2 cup Coconut
2 Green Chills
1 tsp Peppercorns
1 tbsp Cumin
2 Byadgi or Kashmiri chillis for color
1 tbsp Rice for thickening
Sauté 1 cup Onions
Few Curry leaves in 2 tbsp oil till golden
Parboil 2 cups Vegetables
In 2 cups water with
1 tsp Salt
1/2 tsp Turmeric
Add Coconut paste
Add 1/2 cup cooked Thur or Moong Dal (increase to 1 cup for more protien!)
Simmer 5 mts
Add
1 tbsp Ghee (avoid if vegan)
1 tsp fresh ground Pepper
2 tbsp chopped Cilantro
Stir well and serve. Delicious to eat as a soup. Equally delicious if mixed with rice and eaten with the side of crisps !
