Corn Soup
Over low hear,
Sauté in 2 tbsp Olive Oil
1 cup Onions
1 tbsp Jalapeños
1 tbsp crushed Garlic
Till golden brown
Add & Sauté
2 tbsp Flour
1 tsp Chilli Powder
1 tbsp Coriander Powder for 2 mts
Add tsp of oil or water to make sure it doesn’t burn
Gradually add 6 cups Vegetable Stock
Mix in 1 cup first to make sure there are no lumps
Then add the rest slowly stirring frequently
Add 2 cups cooked Corn
For extra flavor use grilled corn
1 cup Cream
Add 1 tsp Salt
Adjust more after tasting
Ready-made vegetable stock often has salt in it
Bring to boil and Simmer 10 mts
Serve hot with Pepper garnish and bread sticks
