Chole ‘

Chole

Pressure cooke
2 cups black Channa
In 6 cups water
With
1/3 tsp Baking Soda
1 tea bag
Let cool

I used tinned Chick Peas
Equally delicious though not 100% authentic 🙃🙂

In a heavy pan
Heat 4 tbsp Oil
Sauté until fragrant
2 inches Cinnamon
2 black Cardamom
1 tbsp Cumin Seeds
1/2 tsp Asafoetida

Add and Sauté until translucent
1 cup Onion
Add
1 tbsp Ginger Garlic Paste
Sauté until golden brown

Add
1 tsp Chilli Powder
3 tbsp Chole Masala
3 tbsp water so spices don’t burn
Sauté  2 mts till fragrant

Add
1 cup Tomato Puree
1 tsp Salt
Mix so all ingredients are combined

Add cooked Chole’
Add enough water to cover
Simmer at low heat for 15 mts for flavors to get absorbed
Stir periodically and add a bit more water if need be so it doesn’t burn

Add
Tadka topping
Heat 1 tsp Ghee
Add and saute for 1 mt till fragrant
1/2 tsp Kashmiri Chilli Powder
1 inch julienned Ginger

Garnish
Onion slices and slit Green Chillis

Serve with hot fluffy bhature!
