Dum Aloo

Dum Aloo

Roast 2 cups baby potatoes till golden

Tadka in 3 tbsp Oil
1 tsp Jeera
1 Bay Leaf
1 black Cardamom
1 inch Cinnamon
Sauté till aromatic

Add 1 cup Onion
1 tsp Salt
1 tsp Ginger Garlic Paste
Sauté till golden

Add 2 cups Tomato puree
Shut and cook till reduced to half the volume and water evaporated

Add
1 tsp Chilli Powder
1 tsp Fennel Powder
1 tsp Jeera Powder
1 tbsp Daniya Powder

Add
1 tbsp Yogurt
Mix well

Add Potatoes
1.5  cups water
Shut and simmer at low for 5 mts till oil separates

Add 1 tsp Kasoori Methi
1 tsp Garam Masala
Switch off and shut 5 mts
for flavors to be absorbed

Delicious Dum Aloo.

Serve with rotis or parathas. Also great with rice.
