Minestrone Soup
In an Instant Pot or Pressure cooker
Sauté
1 cup Onion
1 tbsp Garlic
Add 3 cups of vegetables and 1 cup beans
Here I have used
1 cup Carrots
1 cup Potatoes
1/2 cup Capsicum
1 cup soaked kidney beans
1/2 cup red Capsicum
2 cups Tomatoes
3 tbsp Italian Seasoning
1 tbsp Salt (If Vegetable Broth has salt, taste and adjust accordingly !)
1 tbsp Crushed red pepper
8 cups Unsalted Vegetable Broth
Stir well
If using Instant Pot
Slow cook on low for 4 hrs for best flavors
Or
Pressure cook 2 whistles in Pressure Cooker
Open as soon as safely possible
Then Simmer on low for 10 mts
Check consistency when done. Depending on the potato, it will absorb enough of liquid while cooking and give a thickish soup, sometimes it may be thinner than desired
If thin, for thicker soup,
Add
2 tbsp flour mixed in 1/3 cup water
Shut and let sit 20 mts before serving
Soup will thicken this way.
Delicious Minestrone Soup!
Serve with a side of Foccacia bread.
