Instant Vatha Kuzhambu Mix
Start off roasting 3/4 cup Tamarind
Roast on medium flame till completely dry
Let cool completely
Powder & Seive
After the seiving the mixture
you’ll get about 1/2 cup Tamarind
Set Aside
Sauté in 2 tbsp Oil
12 Red chillis
1 tbsp Cumin Seeds
1 tsp Methi Seeds
20 Curry leaves
1 tsp Mustard Seeds
2 tbsp Thalippu Vadagam if available
Set aside
Mix together
1 cup MTR Sambar Podi
1/2 cup Paruppu Podi
1/2 cup Daniya Podi
1/2 cup Tamarind Powdered as above
1/2 cup Rice flour
1/2 cup Shundakka Berries
1 tsp Turmeric
1 tsp Asafoetida
Add
Tadka Mix
Mix well
Store in airtight container for up to 3 months in fridge
