Peanut Sundal

Pressure cook
2 cups raw Peanuts in
3 cups Water
With 1 tsp Salt
For 4 whistles ( 10 mts in Instant Pot)

Meanwhile make
Sundal Podi
Roast and Powder
2 tbsp Channa Dal
2 tbsp Corander Seeds
1 red Chilli
Keep aside to use

Let cooker cool
Open and drain Peanuts

Tadka in 2 tbsp Peanut  Oil
1 tsp Mustard Seeds
1 tsp Cumin Seeds
3 to 4 Red Chillis
1/3 cup Asafoetida
Few Curry leaves

Add cooked Peanuts

Add enough Sundal Podi (about 2 tbsp) to coat
Add salt to adjust to taste – 1/2  to 1 tsp
Mix well and cook for 2 mts.

Delicious protein packed snack.

Extra Sundal after a day? Add in Sambar and Vatha Kuzhambu for flavor and crunch !
