One Pot Pulav

One Pot Vegetable Pulav

Wash and Soak 3 cups Basmati Rice for 20 mts

In the mean time, sauté in 3 tbsp warm oil till fragrant

6 Cloves
2 Black Cardamom
1 Star Anise
3 inches Cinnamon
2 tbsp Kalpasi
2 Bay Leaves

12 Curry leaves
If you want your Pulav spicy, Add 2 green Chillis with this

1 tbsp Fennel Seeds
1 tbsp Cumin Seeds

Next

Add and Sauté 2 cups onions till golden
Add  2 tbsp Ginger Garlic paste at stage when onions are translucent and brown

Add 5 cups Vegetables of choice that  won’t turn mushy (include Paneer also in this if you like)

Sauté till well coated with oil and spices for 3 to 4 minutes

Add
1.5 tsp Chilli Powder
2 tbsp Garam Masala

4.5 tsp Salt

Add the soaked Rice
Add 3 cups water

Pat ingredients in so all submerged in water
Add 2 tbsp Ghee

Pressure cook in Instant Pot for 6 minutes (2 whistles in regular Pressure Cooker)

When done immediately pressure, so rice doesn’t over cook

Gently fluff up Pulav.

Garnish with fried Onions, Cilantro and Mint
