Frankie or Katti Rolls for dinner
This wasn’t a cooking session for me, rather nostalgic trip to one evening in the late 80s. Making an endless number of them for my assorted cousins, and everyone wanting one more…
A street food style snack, each region has its one variations of the components of the wrap.Here is mine – a potato patty doused in delicious chutneys and wrapped in a flour roti or tortilla.
Prep
🔪Julienne 1 cup each of Carrots, Onion and Bell Pepper/ Capsicum
🌮 8 flour tortillas/ flour or wheat rotis
🌶 Green Chutney
Bend together
1/4 cup green chillies
a small bunch cilantro with a dash of lime juice
Add 1 tsp Chaat masala
1/2 tsp salt
🥘Frankie Masala
Blend together
1½ tbsp Red Chilli Powder
2 tbsp Coriander Powder
1½ tbsp Dry Mango Powder
½ tbsp Garam Masala
1½ tbsp Cumin Powder
🥔Potato Cutlets
🥘Heat 2 tbsp of oil. On Medium heat,
Saute 1/2 cup onion
1.5 tbsp minced Green Chillies
Till onions are golden
🥘 Add 2 tsp ginger garlic paste
Saute for 2 minutes till raw smell goes
🥘 Add
1 tsp Red Chilli Powder
¼ tsp Turmeric Powder
1 tbsp Coriander Powder
1 tsp Garam Masala
½ tsp Dry Mango Powder
Saute a couple minutes till all well blended
Add 2 tbsp of oil or water if the mixture is too dry while sautéing, inso that spices don’t burn.
🥘Add
4 cups cooked and mashed Potatoes
Saute till everything is blended together
🥘Cool and shape into sausage shaped cutlets
Shallow fry till light brown
Assembly
🛠On a warmed flour tortilla/ roti /maida roti
🥘Spread some Green Chutney
🥘Place a Potato Paneer Cutlet
🥘Sprinkle some Frankie Masala. Dry Garlic Chutney* also is a good alternative and tastes great
🥘 Garnish with julienned Carrots, Capsicum(Bell Pepper) and sliced onions Wrap and enjoy !
