Kothu Parata – a delicous way to spice up and rejuvenate day old parathas. Generally layered parathas are torn up and blending into a delicious vegetable sauté mix.

Recipe
🥘Heat 2 tbsp of oil and let crackle
1 tsp Mustard Seeds
1 tsp Jeera ( Cumin seeds )
🥘Add and saute till light brown
3 Thai Green chillies slit into 2
1/3 tsp Asafoetida
1 tbsp julienned Ginger
4 cloves crushed Garlic
1 cup finely sliced onions
10 to 12 Curry Leaves
🥘Add
1.5 cups diced tomatoes
1 Tsp salt
1/3 tsp Turmetic and cook till softened
🥘Add
2 cups mixed Vegetables
1 tbsp Kashmiri Chilli Powder
1.5 tsp Garam Masala
Cook till Vegetables are al dente
🥘Add
3 cups day old parathas or rotis or tortillas
Mix well. Adjust salt to taste
🥘Garnish with 3 tsp of chopped Cilantro. Serve hot as is or with a raita.
