Peel and grate
2 cups Beetroot
Make into a coarse paste
1 in Ginger
1 tsp Cumin
1 tbsp Coriander
2 to 3 Green Chillis – depending on your spice level and sweetness of Beetroot
Few Curry Leaves
Sauté
1 cup Onion
Few Curry leaves
Add Masala
Sauté 2 mts
Add Beetroot
1 tsp Salt
1/3 tsp Asafoetida
Sauté till cooked crip.
Don’t over cook and make soggy
Garnish
2 tbsp Peanuts
2 tbsp Cilantro
Add and mix in
2 cups cooked Basmati rice
Delicous Beetroot Rice – a perfect hint of spice and without submerging the sweetness of the vegetable!
