Roasted Potatoes

Tadka

Heat 2 tbsp Oil
Let splutter
1 tsp Mustard Seeds
1 tsp Cumin Seeds
2 Red Chillis
12 Curry Leaves
Add
1/2 tsp Asafoetida

Add
3 cups Potatoes cubed into inch squares
1/2 tsp Turmeric
1 tsp Salt

Cook on medium high, stirring often until potatoes are 3/4 cooked and browned

Add
1 tbsp Kashmiri Chilli Powder
1 tsp Curry Podi (Recipe in rootedinrasam.com)
2 tbsp Rice Flour

Roast on low flame till crispy

Add 1 tsp of Ghee in the end and mix well

Most delicious Potato Roast !
